Hands up if going out to eat on Valentine’s Day is actually your worst nightmare? Yep, me too. I would 1000% rather make something completely delicious in the comfort & peace of my own home.
This is the perfect dish for this exact occasion. It’s completely divine, but completely easy ( & not too many dishes involved! )
To elevate this little chicken dinner I paired it with mashed potatoes & roasted asparagus – the perfect special dinner at home pairings!

SERVINGS: 3-4
TIME: 30 minutes
INGREDIENTS:
- 5-6 chicken thighs, sprinkled with salt
- 2 tablespoon olive oil
- 1 large shallot
- 1 large garlic clove
- 7 oz sundried tomatoes, drained & sliced
- ¼ cup white wine
- 1 cup chicken broth
- Zest of 1 lemon
- Juice of ½ a lemon
- 2 oz capers – more if you love them like we do!
- ½ teaspoon salt
- ½ teaspoon pepper
INSTRUCTIONS:
- Add olive oil to a large skillet over medium high heat. Add chicken thighs & cook on each side 5-6 minutes, or until cooked through.
- Remove chicken & set aside. If the pan seems dry add in a little more olive oil. Lower heat to medium.
- Add in sliced shallots & chopped garlic. Cook for 2-3 minutes or until tender & fragrant.
- Add in sundried tomatoes & white wine. Let reduce for another 2 minutes.
- Add chicken stock, lemon zest, lemon juice, capers, salt & pepper. Let simmer for 5 minutes.
- Add back in chicken & spoon sauce over it. Delicious!
