I have been on a true sweet potato kick lately. They’re one of those things that I get completely obsessed over & then consequently completely unenthused with all in the span of about 2 months. But right now I’m on the sweet potato train with no exit in sight.

My favorite way to cook them up right now is in fry form! They’re so simple to make, completely delicious & don’t make me feel like garbage like most fries do!

SERVINGS: 4
TIME: 35-40 minutes
INGREDIENTS:
- 2 medium sweet potatoes, peeled
- 2 tablespoons avocado oil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon pepper
INSTRUCTIONS:
- Preheat the oven to 425.
- Thinly slice the sweet potatoes into fry shapes.
- Combine the potato slices with the oil & seasonings.
- Roast for 25-30 minutes. I actually do about 35 because I like them a little bit more on the blackened side.
- Enjoy!
