CHICKEN PESTO PASTA

Pasta is just the perfect weeknight staple. I am not wrong.

:: for this pasta I started by sautéing a red onion & orange pepper in olive oil with a sprinkle of salt over medium heat until tender — about 6-8 minutes.

:: I pushed the veggies to the side of the pan & added in 1 lb ground chicken with another sprinkle of salt.

:: once the chicken was cooked I added in 2 chopped garlic cloves & stirred everything together.

:: then I removed the pan from heat & added in about 1/2 a cup of pesto, 1/2 a teaspoon of red pepper flakes ( optional ), the zest & juice of 1 lemon & 1/2 a cup of pasta water. *pesto is actually not supposed to be cooked!

:: I added in my pasta ( I love Jovial brown rice pasta ) & served with roasted broccoli.
