FARRO BOWL WITH DRIED CHERRIES, KALE & GOAT CHEESE

I love a grain bowl. This one is a little different so it feels fancy, but it’s so simple to make.

:: cook farro according to package & set aside.

:: roast 1 crown of broccoli – I like to drizzle with olive oil, season with salt & pepper, then roast @ 425 F for 20 minutes.

:: sauté 2-3 cups of kale – you can leave it raw, but sautéing it will help it digest easier. I just spray the kale with avocado oil & lightly sauté until just becoming tender.

:: combine! I put everything in a large bowl & mix! Then I top it with the zest & juice of one lemon to give it a little zing. You’re golden.

• 4 oz goat cheese

• 1/2 cup dried cherries

• salt

• lemon zest

• lemon juice

• olive oil
