Summer is almost over, but I’m still holding on tight to all of my summer recipes.
These Greek style chicken skewers complete all my summer cooking dreams. They are completely simple & so, so satisfying. Also did I mention to make them is like three steps? Come on. Game changer.
Seriously, this is simple as pie. I love to use boneless, skinless chicken thighs for these. Chicken thighs are just so forgiving. It’s almost impossible to overcook them.
First, I sliced up the chicken thighs into bite size chunks. Then into a large plastic bag I add olive oil, red wine vinegar, lemon juice, dried oregano, red pepper flakes, honey & pepper. I mix it all together & add my chicken. It’s best to let it marinate for a few hours because this is where all the flavor is coming from. I let mine sit in the fridge for about 8 hours.
* if you want you can also just leave the chicken whole & cook that way!
If you are going to use skewers & they are wooden, be sure to soak them in water for about 30 minutes!
Next I just loaded up my skewers with all my chicken, seasoned with salt & added them to a hot cast iron skillet with a little olive oil.
I cooked on both sides for about 4-5 minutes. They are so good.
But! To send them over the top, I like to send them over the top with a little dijon sauce. All I did for that is whisk all my ingredients ( dijon mustard, olive oil, sour cream, honey, oregano, red pepper flakes & a small pinch of salt ) until it is well blended & thick.
Guys, that’s it. In under 30 minutes you have a totally delicious dinner!
I served the chicken with roasted potatoes & green beans. I cannot stress how simple this meal is, but doesn’t sacrifice flavor at all!

SERVINGS: 4-6
INGREDIENTS:
- 4-6 boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- ⅛ cup lemon juice
- 1 tablespoon dried oregano
- 1 teaspoon red pepper flakes
- 1 teaspoon honey
- 1 teaspoon pepper
- 2 teaspoons salt
- Olive oil for cooking – about 1 tablespoon
For the dijon sauce..
- 2 tablespoons dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon sour cream
- 1 teaspoon honey
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes
- Pinch of salt
INSTRUCTIONS:
- Cut chicken into bite size pieces.
- Mix together olive oil, red wine vinegar, lemon juice, oregano, red pepper flakes, honey & pepper.
- Add chicken thighs pieces to the mixture. Allow the chicken to marinate for up to 8 hours, but at least 1 hour.
- If using wooden skewers, be sure to soak in water for 30 minutes! You can also just skip this step & cook the chicken thighs whole.
- Add chicken to the skewers. Season with salt.
- Cook either on a grill or in a cast iron skillet – about 4-5 minutes per side.
- Mix together ingredients for the dijon sauce. Serve with chicken.
