I find that almost everyone has that one thing that their mom, dad, grandparent.. someone.. made when they were a kid that is still their favorite. They still crave it as an adult. For me, that’s my mom’s banana bread. It is so good & everytime she makes it for me I’m instantly comforted. It’s also probably true for most people that when you make it for yourself it’s never quite the same, but still.. it’s pretty dang good & a little taste of home.
I’ve eaten a lot of banana bread in my day & none have compared to this one. It’s so moist with the perfect balance of banana, cinnamon & butterscotch.. yes, butterscotch! This is probably my favorite thing about this recipe. I’ve had plenty of banana bread with chocolate chips which sure, is great. But man, that butterscotch is incredible!

INGREDIENTS:
- 2 mashed bananas
- ¾ cup sugar
- 2 eggs
- ¼ cup melted butter
- 1 ¾ cup all purpose flour
- ½ teaspoon salt
- ½ teaspoon of baking soda
- 2 teaspoons baking powder
- ½ teaspoon of cinnamon
- ½ teaspoon of nutmeg
- ¼ cup milk
- 6 oz butterscotch chips
- 1 tablespoon of flour to coat butterscotch
INSTRUCTIONS:
- Preheat oven to 350F.
- Combine first 4 “wet” ingredients.
- In a separate bowl combine next 6 “dry” ingredients.
- Gradually add dry ingredients to the wet in batches until everything is well combined.
- Once combined add milk & flour coated butterscotch chips.* Spray two loaf pans generously.
- Bake for 45 minutes or until a toothpick comes out clean.
- Enjoy!
NOTES: coat the butterscotch chip with about a tablespoon of flour. This will ensure that they are evenly distributed & not all sink to the bottom.
