BLUE CHEESE BURGERS – TRUST ME!

I know this is a very controversial subject. I try to keep it pretty civil here, but there are just some things worth standing up for. Blue cheese is delicious & wonderful.

I’m glad I got that off my chest.

I understand that it is a very strong flavor. But it doesn’t always have to be.. cue these blue cheese burgers.

These burgers are juicy, tangy & completely divine due mostly to the blue cheese! In these burger I crumble the blue cheese so, so small. That way it just melts throughout the meat & makes the burger so flavorful. You’ll bite in & think.. “wow, why is this so good? Why is it so creamy? THIS IS AMAZING!” Maybe you don’t get as excited as I do about a good burger, but whatever. Trust me the blue cheese takes these burgers over the top.

So maybe give this a chance?? Just trust me! Seriously.

My biggest tip for making burgers is for your meat to be at room temperature. That way it will crisp & brown beautifully.

I combined all my ingredients & formed them into 4 thin patties. In a large cast iron skillet I added the butter to medium high heat.

I cooked each patty about 4 minutes on each side – that left a little pink in the middle which I like, but if it freaks you out just cook a couple minutes longer! While the patties cook I pour a little worcestershire over each to help develop that savory flavor & keep them moist.

I served the patties on a potato bun with fresh lettuce, mayo, dijon mustard & cooked tomatoes ( 1 pint grape tomatoes, 4 garlic cloves, 1 tablespoon olive oil, 2 teaspoon salt – cooked on low for 30 minutes ).

SERVINGS: 4

INGREDIENTS:

  • 1 lb ground beef, 80/20
  • 4 cloves garlic, roughly chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon red pepper flakes
  • 2 tablespoons worcestershire, plus more to baste burgers in
  • 4 oz Stilton blue cheese, crumbled small
  • 2 tablespoons butter
  • Optional: buns, lettuce, tomato, mayo, dijon mustard

INSTRUCTIONS:

  1. Allow meat to come to room temperature on the kitchen counter.
  2. Combine ground beef, garlic, salt, pepper, red pepper flakes, worcestershire & blue cheese. Form into 4 patties.
  3. To a cast iron skillet add butter & bring to medium high heat. Add patties to skillet.
  4. Baste each patty with a splash of worcestershire, cook for 4 minutes, flip & repeat. * cook 1-2 minutes longer for not pink in the middle of the burger.
  5. Serve with a bun or over lettuce.
  6. Enjoy!
