Aaron recently went to Mongolia for a couple weeks. I know, like NBD. He went in 2016 & completely fell in love with the people, landscape & culture. Whenever he got the chance to go back he immediately jumped on it. I missed him while he was gone, but I was so happy he was able to have the experience again!
After two weeks away from home & in a foreign country, all he wanted when he got back was “chicken & vegetables” While he was gone he said he had so much beef & noodle combinations. Luckily I had this recipe up my sleeve.
This is the perfect meal for a weeknight or when you’re having friends over for dinner. It’s simple, easy to make, but completely satisfying. It’s full of fresh herbs, the tangy mustard & a touch of sweetness from the maple. Paired with roasted vegetables, it’s a home run.

TIME: 30 minutes
INGREDIENTS:
For chicken..
• Olive oil, salt & garlic powder
• 4 large skin-on, bone in chicken thighs
For sauce..
•1 tablespoon olive oil
• 3 large garlic cloves
• ½ cup half & half
• ¼ cup dijon mustard
• 2 tablespoons pure maple syrup
• ½ teaspoon salt
• ½ teaspoon red pepper flakes
• ½ teaspoon pepper
• 1 teaspoon fresh thyme
• 1 tablespoon fresh basil, chopped
• 1 tablespoon butter
INSTRUCTIONS:
For chicken..
1. Preheat oven to 425.
2. Leave chicken on the counter for 30 minutes to bring to room temperature. Coat chicken with salt & garlic powder to taste on both sides. * I usually do about 1/2 a teaspoon of each seasoning per thigh. 3. In a large cast iron skillet, add 1-2 tablespoons olive oil to medium heat. Add chicken skin-side down first.
4. Cook chicken 5-6 minutes. Flip, cook another 5-6 minutes.
5. Cover with aluminum foil & let rest 10 minutes.
For sauce..
1. In a skillet add 1 tablespoon of olive oil to medium low heat. Add chopped garlic & cook for 1 minute.
2. Add half & half, dijon mustard & maple syrup. Cook for another 3-4 minutes on a low simmer & allow to thicken.
3. Add seasonings & fresh herbs. Cook another 2 minutes.
4. Add butter. Serve over chicken.
5. Enjoy!
