ENCHILADA BOWL

I love a good bowl! Perfect way to eat so many delicious things without a lot of work.

BEEF ENCHILADA MIX:

I cooked 1 lb of ground beef through & drained off the fat.

:: next I added in 2 tablespoons tomato paste, 1 teaspoon salt, 1 teaspoon pepper, 1 tablespoon onion powder, 1 tablespoon garlic powder, 1 tablespoon chili powder & 1 tablespoon cumin. *you can also add in a few dashes of your favorite hot sauce.

:: after that cooks for another 2 minutes I added a 1/2 cup of vegetable stock, covered & let simmer for 10 minutes.

I served it over a bed of greens with roasted potatoes, roasted peppers, roasted onions & roasted broccoli.

Easy dinner that’s under 30 minutes!
