Energy Bites

Everyday around 2pm I get so stinking tired without fail. It’s typically the time a day I find myself searching through the pantry for something sweet to get me through the rest of the day. 

But once I started making these energy bites I was totally changed! They really do give me that boost that I need mid-afternoon & can be made either chocolatey or fruity to satisfy my sweet tooth.

 I usually make a batch of these every Monday morning so Aaron & I can eat them throughout the week. They’re also perfect for a breakfast on the go because they are full of fiber to keep you full until lunch time.

These energy bites are made up of oats, ground flaxseed, peanut butter, honey, cinnamon & whatever flavors you want. I do two flavors.. one with chocolate chips & then one with dried blueberries, dried raspberries & yellow raisins. White chocolate chips are a great addition to both of these versions!

It’s a simple as mixing it all up, letting it chill in the fridge for about 15 minutes & then forming them into balls. I store them in the fridge & just grab one when I need it!

SERVINGS: 10 medium balls 

INGREDIENTS:  

  • 1 cup oats
  • 1/2 cup ground flaxseed
  • 2/3 cup peanut butter – preferably no sugar added ( I like crunchy for the texture! )
  • 1 tablespoon honey1 teaspoon cinnamon

Optional add ins..

  • Chocolate chips
  • Dried fruit ( like blueberries, raspberries, strawberries )
  • Raisins ( I love golden raisins! )
  • White chocolate chips


INSTRUCTIONS: 

  1. Mix together first 5 ingredients & then whichever flavor add in. 
  2. Let sit in the fridge for 15 minutes.
  3. Form into balls of desired size.
  4. Store in the fridge for a week. 
  5. Enjoy!
