GREEK CHICKEN BURGERS

I love a good burger. I also love the fact that you could have a burger every day of the week & not repeat a meal. 

I think it’s so fun to change things up with a classic. These Greek Chicken Burgers meet the bill. They’re full of so many different flavors, but they create something super delicious.

These are great served as a classic burger, but also completely delicious without a bun. They work great over rice, a salad or alongside some roasted veggies.

If eating this as a true burger I love to top it with thinly slice red onion, fresh pickles, mayo & lettuce!

SERVINGS: 4 burgers

TIME: 30 minutes

INGREDIENTS:

  • 1 lb ground chicken
  • 6 oz jarred roasted red peppers, chopped
  • 1 head roasted garlic or 3 garlic cloves, chopped
  • 2 tablespoons coconut aminos
  • 1 oz capers
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • ½ teaspoon pepper
  • 3 oz feta
  • 2 tablespoons olive oil

INSTRUCTIONS:

  1. Combine all ingredients except for the olive oil. Combine well, but try not to over mix! 
  2. Portion into 4 patties.
  3. In a large cast iron skillet bring olive oil to medium high heat. Add chicken burgers. Cook on the first side for 3-4 minutes.
  4. Flip & cook for another 2-3 minutes. 
  5. Enjoy!
