ITALIAN SAUSAGE & GNOCCHI BAKE

Okay, let me give you all the reasons why this sausage & gnocchi bake is all you’ll ever need for the perfect dinner. 

First of all.. gnocchi. I mean, come on. This stuff is delicious alone.  Now add salty itailian sausage, tender peppers, top it all off with fresh mozzarella. FORGET ABOUT IT. 

It takes like 30 minutes to get to this beautiful, bubbly goodness. Let me walk you through it!

First, start by cooking your gnocchi in boiling, salted water. I like to boil it for only 2-3 minutes so it doesn’t get mushy. 

Next, I add a pound of mild italian sausage to a cast iron skillet over medium heat. Once it’s all cooked through I remove it from the skillet onto a plate & add in my thinly sliced peppers & shallots. 

Cook those hunnies until they’re all nice & tender. Once that’s done, turn the heat down to low. Then add in the chopped garlic & tomato paste & let it cook off for a minute. It’s important to cook the tomato paste for a second to loose the raw flavor. 

After this step I added in a little chicken stock & heavy cream. I let it simmer for for about 5 minutes until it begins to reduce & thicken. Now it’s all about adding back in all the goodness. ( this means the gnocchi & italian sausage! ) 

I mix it all up & top it off with fresh mozzarella. OMG. I put it under the broiler for about 5 minutes to get the cheese all bubbly & brown. 

Y’all, seriously. This is so good. It’s a huge skillet of food, but Aaron & I may have eaten it all in one sitting!

TIME: 30 minutes

INGREDIENTS:

  • 16 oz gnocchi
  • 1 lb italian sausage
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large shallot
  • 3 garlic cloves
  • 1 tablespoon tomato paste
  • ½ cup chicken stock
  • 1 cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 oz fresh mozzarella

INSTRUCTIONS:

  1. Add gnocchi to boiling, salted water. Boil for 2-3 minutes until beginning to become soft. Drain.
  2. In a large cast iron skillet, add italian sausage to medium heat. Cook through & remove to a plate.
  3. Thinly slice peppers & shallot. Add to skillet & cook until tender. 
  4. Turn heat to low. Add in chopped garlic & tomato paste. Cook another minute.
  5. Add chicken stock & heavy cream. Simmer for 5 minutes until it begins to thicken & reduce. 
  6. Add in the gnocchi, italian sausage, salt & pepper. Top with torn fresh mozzarella. 
  7. Broil in the over for 5 minutes or until the cheese is bubbly & beginning to brown. 
  8. Enjoy!
