OH, Summer! How I have loved you so much this year. And I really mean this year. Normally I am not a fan of this hot & muggy season. But for some reason this year it really got me. Maybe it’s because I was able to travel a lot, maybe because I feel like it didn’t get *too* hot. I think mainly I loved it because I got to spend a lot of time with people I love & eating food of the season.
Corn is one of my favorite summer foods & I try to eat it as much as I possibly can. I’ve eaten it alone, I’ve put it into tacos, I’ve put it into stuffed peppers, I’ve made a super good corn salsa with it. The leftovers of the corn salsa lead me to this next divine recipe.. Mexican style corn fritters. Yes, yes & thank you.

These are super simple! First I mixed together flour, baking powder, salt, chili lime seasoning & garlic powder together in a bowl. After it’s all well combined, I added about 2 cups of my leftover corn salsa.
In another bowl ( really I used a small measuring cup, ha! ), I whisked together an egg with some milk. After that is well combined, I added it to my corn batter.
Now, in a large cast iron skillet I melted 2 tablespoons each of butter & olive oil over medium high heat. Using a ½ cup measure, I scooped my batter into the skillet. I cooked for about 5 minutes on each side & then removed to a baking sheet & sprinkled with salt.
This batter makes about 8-9 fritters. I think it’s best to remove the old butter & olive oil mixture about ½ way through frying the fritters. Then all the fritters will be perfectly golden.
How can you go wrong with corn fritters? They’re sweet, crisp, full of all that gluten goodness. I sent these over the top by adding diced red onions, pimentos, cilantro, lime & goat cheese. YUM!
These are the perfect summer snack, but, I mean, thank goodness we have frozen corn so we can eat these babies all year long.

SERVINGS: 8 corn fritters
TIME: 30 minutes
INGREDIENTS:
- 1 cup flour
- ½ teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons chili lime seasoning from Trader Joe’s ( you could also just use regular chili powder )
- 1 teaspoon garlic powder
- 2 cups corn salsa – recipe here! ( you can also substitute regular fresh corn or frozen corn! )
- 1 egg
- 1 cup milk
- 4 tablespoons each of olive oil & butter
For serving: pimentos, goat cheese, red onions, cilantro, limes
INSTRUCTIONS:
- Combine first 5 ingredients together. Mix in corn salsa.
- Combine egg & milk, mix together with corn & flour mixture.
- In a large cast iron skillet add 2 tablespoons each of butter & olive oil over medium heat. Using a ½ cup measure, scoop batter. Cook on each side 5 minutes.
- Halfway through cooking the fritters remove the butter & olive oil mixture, then add the other 2 tablespoons of butter & olive oil.
- Serve with pimentos, goat cheese, red onions, cilantro & limes.
