PARCHMENT LEMON SHRIMP & VEGGIES

Are you afraid to cook seafood? Me too. Why is that? Why is cooking fish more intimidating than cooking steak? I honestly don’t know. I’ve only made fish once, but I love fish! I would eat it every week if I felt like I had any clue what I was doing. I’m setting a goal for myself this summer to get more comfortable cooking seafood at home.

I started with this parchment shrimp recipe. I feel like shrimp is a lot simpler to cook than fish ( it may not be, those are just my feels! ) Also, shrimp is pretty cheap, guys! I was able to buy  our shrimp for this for $1.50! That’s amazing.

This whole meal is so simple, completely delicious & perfectly fresh for summer!

To begin, I cut a large square of parchment paper. I know the parchment paper pouch might be intimidating too, but I promise it’s really easy!

Once I have my square down I layer trimmed asparagus & thinly sliced red pepper. I sprinkle the veggies with salt & then place my raw, shelled & deveined shrimp on top. I sprinkle the shrimp with salt, pepper, garlic powder & a little cayenne. Then I top it all with a couple lemon slices.

Now there are lots of pretty ways to close up your parchment paper, but that’s not really within my talents. I just kinda bunched the top together & then took another sheet of parchment paper & wrapped it around. You’re really just trying to close that baby up so that while it is baking, it is also steaming.

All that’s left is to put it in an oven @ 350 for 20 minutes. After it has cooked, I let it sit ( still wrapped ) for about 5-8 minutes.

I mean, come on.. how simple! Simple recipe, simple instructions. I think this is going to be a go to this summer.

Ingredients:

Always: salt, pepper, garlic powder

  • Asparagus, 12 – 16 spears
  • ½ red pepper, sliced
  • Shrimp, 10-12, raw, shelled & deveined
  • 4 slices of lemon
  • Cayenne pepper, ½ – 1 teaspoon depending on how spicy you want it!
  • Parchment paper

Instructions:

  1. Preheat oven to 350
  2. Wash veggies – trim asparagus & slice red pepper thinly.
  3. Cut 2 large squares of parchment paper.
  4. Layer asparagus & red pepper – sprinkle with salt.
  5. Add shrimp – sprinkle with salt, pepper, garlic powder & cayenne.
  6. Add sliced lemon.
  7. Close parchment paper – I bunched the top together & then took another sheet of parchment paper & wrapped it around. You’re really just trying to close it completely so that while it is baking, it is also steaming.
  8. Bake for 20 minutes, then let sit ( still wrapped ) for 5 – 8 minutes.
  9. Enjoy!
