Pear, Asparaus & Caramelized Onion Flatbread

Wow, what a name. What a mouthful. But what a delicious, Spring dinner.

I love eating by season. It helps me enjoy the time more by really leaning into what the earth is providing right now. By far my favorite food season is Spring, duh! All of those veggies! They’re so fresh, crisp & full of flavor. And the fruit! I swear this was the best pear I’ve had ever (?). It took so much self control to actually put it on the flatbread & not just eat it straight up.

This would be a great appetizer if you’re having a bbq or as a light lunch. We had it with some roasted cauliflower & it was the perfect simple, fresh dinner.

Let’s get started before I go over the top talking about it!

The only truly labor intensive part of the flatbread is the caramelized onions, which really isn’t even that labor intensive. It just takes some time.

Begin by slicing 1 small onion & add it to a skillet with ½ a stick of melted butter & a dash of salt. To get a good caramelization you want your heat low. This is where you have to be patient. It will take time. Don’t get in a hurry & bump up your heat. All will be ruined! Just keep it low, stir every few minutes, ponders the wonders of the universe or make your grocery list.

You can also use this time to prep your other ingredients – slicing the pear & cutting the asparagus. I like to peel the pear, but that’s completely optional.

Everything else is super easy peasy.

For the base of the flatbread I used puff pastry because it’s stinking delicious. You could also use, oh I don’t know, a real flatbread.. live your truth, whatever it is.

If your truth is puff pastry, good for you. I always roll the pastry out a little to make it a bit bigger.

Now just dump it! Actually, I placed it all very carefully & purposefully. But sometimes I like to pretend I live on the edge.

I drizzled the puff pastry with olive oil, then arranged my pears, asparagus, caramelized onion & the heavy hitter… goat cheese!

Then I sprinkled it all with a little salt & lots of black pepper. It went into the oven for about 20 minutes.

Once it came out, I drizzled with a little more olive oil & it was incredible. I loved it. Aaron loved it. Our dogs loved watching us eat it. Everyone was happy!

INGREDIENTS:

Always: olive oil, salt & pepper

  • 1 puff pastry
  • 1 small onion
  • ½ stick butter
  • 1 large pear, sliced
  • ¼ cup chopped asparagus – about ½ a bunch
  • 3 oz goat cheese

INSTRUCTIONS:

  1. Preheat oven to 400.
  2. Begin caramelizing your onion – melt butter in large skillet over LOW. Slice onion & add to melted butter. Season with salt & continue cooking on low heat, stirring occasionally until golden brown.. about 30 minutes.
  3. Roll out puff pastry until it is a little bigger. Drizzle with olive oil.
  4. Add sliced pear, chopped asparagus, caramelized onions & goat cheese.
  5. Season with salt & pepper to taste.
  6. Bake for 18-20 minutes.
  7. Drizzle with extra olive oil.
  8. Enjoy!
