ROASTED VEGGIE ORZO

so damn easy & delicious

:: on a sheet pan I added a chopped zucchini, chopped onion, chopped orange pepper, 1 pint whole cherry tomatoes, 2 largely chopped garlic cloves, drizzled heavily with olive oil, a few splashes of balsamic vinegar & a heavy pinch of salt.

:: the veggies roasted @ 450 for 20-25 minutes.. flipping halfway through.

:: when the veggies were done I added them to cooked orzo ( I used Banza rice which is more similar to an orzo than rice IMO ) with a little butter, another sprinkle of salt, pepper, the zest of a lemon, juice of a lemon & feta.

you could add in herbs, pesto, arugula, spinach, other cheeses, etc. so few dishes & completely delicious!
