SPRING TIME QUICHE

If you know my food preferences at all, you know I am not into eggs. Like really at all. I’ve tried, too! I know they’re such a great source of protein.. yada, yada. There’s just something about it I can’t get over.

That is until I ate these little quiche things at panera. Omg. They are really good. I don’t know why I ever ordered one, but I did. At first I picked out the big chunks of eggs, but now I’m eating the whole thing! You see how proud I am of myself? Major eye roll.

Since then I’ve been a little more bold with my egg choices. I’ve figured out that I really like quiche in the process. Probably because there is a lot of other flavors & textures going on besides just eggs.

I decided to try to make a quiche for myself using a lot of things I loved. Sausage, cheese, fresh veggies. How could it go wrong?

I used to store bought pie crust for this because I’m not crazy/have unlimited time. I let the pie crust sit on the counter for about an hour to let it get to room temperature.

Then I cooked a pound of mild italian sausage. You could also do spicy italian sausage, plain ground pork or even ground turkey.

I sprayed my dish before adding the pie crust & then added the meat. Next I added sliced grape tomatoes. I love getting the “variety snacking” pack. There are so many pretty colors! I also add all that beautiful shredded asiago cheese. Asiago is my love language.

Next.. the eggs! I mixed 6 eggs with a ½ cup of milk & seasoned with salt & pepper. I poured this over the meat, tomato & cheese mixture.

Now, let’s make it pretty! I placed sliced zucchini, yellow squash & red onion right on top. I love when food can look beautiful! I sprinkled the top with a little extra salt & pepper.

This little baby went into the oven at 350 for 55 minutes to 1 hour, or until it wasn’t giggly anymore. Once it came out of the oven, I let it sit for 15 minutes before slicing.

LET me tell ya.. I love this! It had so many fresh flavors & wasn’t too eggy for me at all! It was cheesy & meaty. I downed a slice or two as soon as it was ready.

Ingredients:

  • 1 prepared pie crust
  • 1 lb mild italian sausage
  • 1 cup sliced grape tomatoes ( orange & red )
  • 1 cup shredded asiago cheese
  • 6 eggs
  • ½ cup milk
  • 1 teaspoon salt ( plus more for sprinkling the top )
  • 1 – 2 teaspoons pepper, depending on how much spice you like ( plus more for sprinkling the top )
  • ½ a zucchini, sliced
  • ½ a yellow squash, sliced
  • ½ a small red onion, sliced
  • ¼ cup fresh basil

Instructions:

  1. Preheat oven to 350.
  2. Lay out pie crust to bring to room temperature.
  3. Cook sausage.
  4. Spray a pie dish generously & add the pie dough. Add sausage, sliced tomatoes & shredded cheese.
  5. Mix eggs, milk, salt & pepper. Pour over pie mixture.
  6. Add sliced zucchini, yellow squash & red onion to the top. Sprinkle with salt & pepper.
  7. Bake for 55-60 minutes, until set.
  8. Let sit for 15 minutes.
  9. Top with fresh basil.
  10. Enjoy!
